Mixed Okro Special
So lets cook Mixed Okro in an unusual way today! Trust me you should try out this recipe before the year runs out!
Ingredients:
Palm Oil
Ponmo
Chilli powder
Offals
Dried Fish
Crayfish
Prawns
Shrimps
Locust beans
Chicken wings
Mushrooms
Salt
Seasoning
Pumpkin leaves (Ugwu)
Ogbono
And of course, Okro!
Directions:
Soak your dried fish in hot water and salt for about 4 hours.
Cook your chicken wings and set aside the broth.
Heat your palm oil in a pan (the trick is to add a cup of water to the palm oil before it gets hot and allow it to boil, this would allow the palm oil to cook and also get rid of smokes that comes with bleaching). add chilli powder to the oil and water mixture, add the offals, dried fish, crayfish, prawns, shrimps, locust beans and the chicken broth enough to accomodate everything. Cover, and allow to cook for about 2 mins.
Add the chicken wings, shredded pumpkin leaves and mushroom with salt and seasoning to taste (be careful to taste first before adding salt and seasoning because of the chicken broth) and allow to cook for about a minute.
Sprinkle in a lttle bit of ogbono into the mixture, then add the okro and allow to cook for about 3-5 mins.
Voila!
Your Mixed Okro Special is ready!
Serve with Fufu or Eba or any morsel of your choice.
